
Wheat Bran Muffins
Superfine Wheat Bran Muffins
Ingredients:

1 cup superfine wheat bran

1 cup whole wheat flour

1/2 cup all-purpose flour (optional, for lighter texture)

1 tsp baking soda

1 tsp baking powder

1/4 tsp salt

1 tsp cinnamon (optional)

1/2 cup brown sugar or honey (for sweetness)

1/4 cup vegetable oil (or melted coconut oil)

1 cup milk (or almond milk)

1 tsp vanilla extract

1/2 cup raisins or chopped nuts (optional)
Instructions:

Preheat the oven to 350°F (175°C). Grease or line a muffin tin with paper liners.

Mix dry ingredients: In a large bowl, whisk together the superfine wheat bran, whole wheat flour, all-purpose flour (if using), baking soda, baking powder, salt, and cinnamon.

Mix wet ingredients: In another bowl, whisk together the brown sugar (or honey), oil, egg, milk, and vanilla extract.

Combine the mixtures: Gradually add the wet ingredients to the dry ingredients, stirring just until combined. Avoid overmixing.

Add optional ingredients: If you're using raisins or nuts, fold them into the batter.

Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.

Bake: Place the muffin tin in the oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Cool: Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
